Garden Veggie Frittata

Ingredients: 

  • 1 tsp olive oil
  • 1/2 c broccoli cut into pieces
  • 1/4 c yellow squash cut into pieces
  • 1/4 c zucchini squash cut into pieces
  • 1 red bell pepper cut into pieces
  • 1/2 c chopped onion
  • 4 eggs
  • 4 egg whites
  • 1/2 c shredded cheddar cheese
  • Fresh herbs for garnish (cilantro, parsley, or green onions)

Instructions: 

  1. Preheat the oven to 400 degrees. Heat the oil in an 8-inch cast iron skillet over medium-high heat.
  2. Add the onion and bell pepper to the pan along with a tbsp of water and cook, stirring until the veggies are tender.
  3. Add the broccoli, and squash to the pan along with a tbsp of water and cook, stirring until the veggies are tender.
  4. Season the veggies to taste with salt, and pepper.
  5. Remove the veggies from the pan and wipe the pan clean with a paper towel.
  6. Coat the pan with cooking spray.
  7. In a bowl, whisk together the eggs and egg whites, and season to taste.
  8. Add the vegetables and cheese to the egg mixture and stir until combined.
  9.  Pour the egg mixture into the pan and place in the oven.
  10. Bake for 15 minutes or until the center is set. Garnish with fresh herbs, cut into wedges, and serve.
