Ingredients:
- 1 tsp olive oil
- 1/2 c broccoli cut into pieces
- 1/4 c yellow squash cut into pieces
- 1/4 c zucchini squash cut into pieces
- 1 red bell pepper cut into pieces
- 1/2 c chopped onion
- 4 eggs
- 4 egg whites
- 1/2 c shredded cheddar cheese
- Fresh herbs for garnish (cilantro, parsley, or green onions)
Instructions:
- Preheat the oven to 400 degrees. Heat the oil in an 8-inch cast iron skillet over medium-high heat.
- Add the onion and bell pepper to the pan along with a tbsp of water and cook, stirring until the veggies are tender.
- Add the broccoli, and squash to the pan along with a tbsp of water and cook, stirring until the veggies are tender.
- Season the veggies to taste with salt, and pepper.
- Remove the veggies from the pan and wipe the pan clean with a paper towel.
- Coat the pan with cooking spray.
- In a bowl, whisk together the eggs and egg whites, and season to taste.
- Add the vegetables and cheese to the egg mixture and stir until combined.
- Pour the egg mixture into the pan and place in the oven.
- Bake for 15 minutes or until the center is set. Garnish with fresh herbs, cut into wedges, and serve.
